optimize and configure EC2 webserver

I have created a Plesk 12 web server on a [login to view URL] instance. I have 6-7 sites running in Plesk. All sites are WordPress sites but it is one that is causing the issues. I am using a caching plugin and CloudFlare as well. All of the traffic is going to one page so I do not understand why it using so many resources.
Everything has been running well until today when one of my sites started to get some good traffic. I have been averaging 50-100 people at any time right now. I was getting 503 errors. I was able to see in the logs "mod_fcgid: can't apply process slot for /var/www/cgi-bin/cgi_wrapper/cgi_wrapper error" I did change FcgidMaxProcesses to 200 from 20 in the [login to view URL] file and that seemed to take care of part of the issue. I am still pegging out at 100% CPU.
I need help to configure and optimize the server to make sure we can identify and kill whatever is killing the resources,
